Sourdough Stretch & Fold with J'aime Payne and Carlie Glasser

After a year of baking, feeding, stretching and folding (and occasionally failing) J’aime is excited to finally share the sourdough process with you!

In April 2025, J’aime took The Art of Sourdough Bread Making with Pat Miskiman and has been nurturing her starter and refining her method ever since. Now it is your turn to learn the foundations in a relaxed, hands-on afternoon workshop.

Join us from 10:00 AM to 2:00 PM on Saturday May 9th for an approachable sourdough class where you will make your own dough, learn the stretch-and-fold process, and leave with the confidence to continue at home.

Because sourdough includes 30-minute rest periods between folds, those breaks will be filled with gentle guided movement led by Carlie Glasser. These yoga breaks may take place both on yoga mats and using chairs, making them highly accessible for a wide range of comfort and mobility levels.

In this workshop, you will:

  • Learn the basics of sourdough baking

  • Mix and create your own dough from scratch

  • Practice the stretch-and-fold process

  • Learn about final fold, overnight prep, and scoring

  • Take your dough home to bake the following day at your convenience

You’ll leave with:

  • Your own sourdough starter

  • Your prepared dough ready for baking the next day

  • A few helpful tools to support your sourdough journey including

    12x12 Granite Slab (just trust me, you want this!)
    Dough Scraper
    Baking Sling
    Danish Dough Whisk
    Scoring Tool
    Flour & salt

Schedule

  • 10:00 AM – Arrive, settle in, coffee & tea

  • 10:30 AM- 12:00 PM– Stretching & folding (in more ways than one)!

  • 12:00 - 12:30: Snack break! 

  • 12:30 PM - 2:00 PM
    Hands-on practice on pre-prepared dough; window test/prep for overnight, and the scoring process. Final fold, clean-up & head out!

Lunch
Snacks will be provided during lunch, but please bring any additional food you would like.

Items to Bring
Please bring these if you already have them:

  • Your tried-and-true plastic mixing bowl, if you have a favourite

  • A food scale with grams, if you own one

  • Lunch snacks!

About our Artists:

J’aime Payne - With a background in the performing arts, J’aime once spent much of her time with a guitar and microphone in hand. Since moving to Moosomin, though, she has discovered a whole new world of creativity through MVAC. She’s enjoyed exploring everything from sewing, pottery, and papier-mâché to cooking and, naturally, sourdough baking. J’aime is grateful for the chance to keep learning, creating, and sharing that joy with others.

Carlie Glasser - Carlie Glasser is a yoga instructor and fitness coach based in Moosomin, Saskatchewan. She teaches yoga through Anytime Fitness Moosomin and collaborates with local wellness spaces to offer both group classes and private sessions.

Carlie’s teaching style focuses on accessibility, guiding students through gentle movement, breathwork (pranayama), and short meditative practices designed to improve mobility, reduce stress, and support overall well-being. Her classes are known for their calm, welcoming energy and are suitable for beginners while still offering depth for more experienced participants. 

In addition to group classes, she offers one-on-one sessions and participates in community fitness events, often integrating functional movement and recovery-based yoga into broader wellness programming.
